Okay, these are the fluffiest, chewiest cookies I’ve ever made! I noticed last night that I had two ripened bananas and knew that I had to do something with them. I didn’t want to make muffins or bread, so with the help of Taste From Home, I made the next best thing (and quite possibly, my new favorite cookie) — Banana Chocolate Chip Cookies!! INGREDIENTS
1/3 cup butter, softened
1/2 cup sugar
1 large egg, room temperature
1/2 cup mashed ripe banana
1/2 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
1 cup semisweet chocolate chips
INSTRUCTIONS
1. Preheat oven to Bake at 350°.
2. In a small bowl, cream butter and sugar until light and fluffy.
3. Beat in the egg, banana, and vanilla.
4. Combine the flour, baking powder, salt, and baking soda; gradually add to creamed mixture and mix well.
5. Stir in chocolate chips.
6. Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray.
7. Bake for 13-16 minutes or until edges are lightly browned.
8. Place on wire racks to cool.
