Recipe of the Week: Banana-Cinnamon Muffins


If any of you haven’t subscribed to Betty Crocker online, DO IT NOW. Every day, they send you an email filled with delicious recipes that are so easy to make, you’ll wish you had subscribed earlier. This is how I found my new favorite recipe. When I say that they are absolutely SCRUMPTIOUS, it’s because there is currently no other words to describe this treat. With bananas, cinnamon, and sugar being the prime ingredients, this one is guaranteed to be a hit with everyone...Or you might just want to keep them all to yourself. 😋 Check out the recipe below and let me know what you think about them in the comments!


INGREDIENTS


MUFFINS

2/3 cup sugar

1/2 cup vegetable oil

2 eggs

2/3 cup mashed very ripe bananas (2 small)

1 tsp vanilla

1 2/3 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

1/2 tsp ground cinnamon


TOPPING

1/4 cup sugar

1/2 tsp ground cinnamon

1/4 cup butter, melted



INSTRUCTIONS

1. Heat oven to 375°F. Grease bottoms only of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups.


2. In a medium bowl, beat 2/3 cup sugar, the oil, and eggs with a wire whisk. Stir in bananas and vanilla. Stir in remaining muffin ingredients just until moistened. Divide batter evenly among muffin cups.

3. Bake 17 to 21 minutes or until a toothpick inserted in the center comes out clean. Immediately remove from pan to cooling rack.

4. In a small bowl, mix 1/4 cup sugar and 1/2 teaspoon cinnamon. Dip muffin tops into melted butter, then into cinnamon-sugar. Serve warm.
