Recipe of the Week: Bruschetta

I don’t know why it’s taken me so long to have bruschetta this summer. My mom’s garden has provided some delicious, fresh tomatoes and we’ve also grown our own basil, which is amazing. The only thing left was to get some bread and mozzarella. So finally, my mom and I decided that today was the day. We picked up everything we needed and went to town. The only thing I can say is that I wish we had done this sooner! Below is the recipe that I used but as you probably know, there are so many recipes you can find for bruschetta. This was just the way we preferred to have it. Enjoy!


INGREDIENTS

French Baguette

Tomato

Mozzarella

Fresh Basil

Salt

Pepper


INSTRUCTIONS

1. Cut the french baguette into thick slices and toast them to your preference.

2. Dice the tomato and sprinkle some salt and pepper on them.

3. Slice the mozzarella into relatively thick slices (that’s just my preference) and place them on the toasted bread, before adding a spoonful of the diced tomatoes.

4. Place a couple of basil leaves on top (I leave them whole, but you’re more than welcome to dice them).

5. Eat and enjoy!
